Hi, I just came across your recipe while looking for a vegan souffle. It sounds great. I worked along the same lines after being unable to find any vegan bacon & egg pie recipes. What a great idea! I almost tried a vegan souffle myself after my local newspaper (shocking, I know) ran a recipe for one in the food section this week. Sounds delicious.
